Chewy Lemon Cookies

A little bite of spring. These little cookies have a refreshing lemon flavor, with a crispy edge, and a chewy center. We drizzled a lemon juice glaze to give them an extra burst of citrus flavor.

Whisk together the flour and salt.

In another bowl, cream the butter, sugar, lemon zest, and honey.

Mix together the lemon juice and baking soda. With the beater on, add in the lemon juice mixture and the dry ingredients.

Drop 1-inch balls onto a greased cookie sheet.

While the cookies are baking, make the glaze:

Once the cookies are done baking, let them cool, and then drizzle the glaze over the cookies.

These cookies are like little lemon drops in cookie form. I'd even suggest upping the amount of lemon juice and zest for a stronger flavor.

Chewy Lemon Cookies

A taste of spring

Yields: 20 - 30 cookies

Time: 30 minutes


1 3/4 cup all-purpose flour

pinch of salt

1/2 cup (1 stick) butter

zest of 2 lemons

1/2 cup granulated sugar

1/4 cup honey

1 teaspoon baking soda

2 tablespoons lemon juice

1/2 cup powdered sugar

1 tbsp lemon juice


1. Preheat oven to 350 degrees. Whisk flour and salt.

2. In a separate bowl, cream butter, lemon zest, sugar, and honey until very smooth (about 3 minutes).

3. Add baking soda and lemon juice and mix for a few seconds. Add flour and salt mixture, and mix on low until just combined. Don't overmix! Mix dough by hand a few times to ensure even distribution of ingredients. The dough will feel very, very soft.

4. Roll dough into balls (think ping pong ball-size). Bake for 10 - 12 minutes, until just barely starting to brown.

5. Meanwhile, for the lemon glaze: Combine powdered sugar and 1 tbsp lemon juice. Let cookies cool before topping with the prepared lemon glaze. Another option is to simply toss the cookies in powdered sugar coating. Enjoy!

: Store in air-tight container in a cool, dry place.
