Wow. What can we say other than we are incredibly happy and excited for you?

Monica and I feel so lucky that we got to know you through our blogs, got to experience your kindness and enthusiasm and support. One of the joys of food blogging is getting to meet amazing people like you who share the same excitement and passion about what we do. 

We really admire the that fact that not only do you turn out the amazing desserts and treats that you do, but that you've completely re-taught yourself how to make in the past year or two to accommodate your dietary restriction. I can't imagine not baking with flour, butter, or sugar, and am so impressed by what you make whenever I am on your blog

When Meriem of Culinary Couture asked  us to be a part of your bridal shower, we of course were thrilled. We decided to dress up your flourless chocolate peanut butter cookies for the occasion by dipping them in chocolate and sprinkling edible gold dust on them. They're amazingly easy, yet elegant, and we loved your recipe. (Plus we were told that your wedding is Gatsby-themed....Gah, so much fabulousness!)

We wish you every happiness in this new phase of your life (Is that what you're supposed to say? I actually have no idea...we haven't reached the age when all our friends have started getting married.)

Flourless Chocolate Peanut Butter Cookies

Yields: 12-15 cookies
Adapted from A Clean Bake

1 cup peanut butter
1 egg
½ cup honey
1 teaspoon vanilla extract
¼ teaspoon salt
½ cup cocoa powder

For Assembly
4 ounces chocolate
edible gold dust (optional)

Preheat the oven to 350 F. In a mixing bowl, combine the peanut butter, egg, honey, vanilla, and salt. Mix until smooth. Mix in the cocoa powder.

Roll the dough into 1.5-inch balls and place on a greased baking sheet two inches apart. With the palm of your hand, flatten the spheres slightly. 

Bake the cookies for 8-10 minutes. They will firm up as the cool. Let cool completely.
Melt the chocolate in a microwave, at medium power for about 1 minute 30 seconds, stopping every 30 seconds to give the chocolate a stir.

Dip the top of the cookie in the chocolate. Place on a baking sheet. Repeat with the rest of the cookies. Sprinkle gold dust over the cookies, if using.
Let the chocolate set, then eat!
